HOW TO MAKE COWBOY COOKIES

If you've ever made a chocolate chip cookie from scratch, you've already come pretty close to making Cowboy Cookies. The only difference is a few extra add-ins -- rolled oats (not to be confused with quick-cooking oats), unsweetened coconut flakes, and chopped pecans.

  1. Whisk together dry ingredients: Flour, baking soda, salt, and cinnamon.
  2. Mix wet ingredients: Butter, granulated sugar, brown sugar, eggs, and vanilla.
  3. Add dry ingredients to wet ingredients and mix.
  4. Add the oats, chocolate chips, coconut, and pecans and mix.
  5. Scoop and bake 350° for 12 minutes.

Ingredients

  • 2 ¼cupall-purpose flour
  • 2teaspoonsbaking soda
  • 1teaspoonfine sea salt
  • ¼teaspoonground cinnamon (optional)
  • 1cupunsalted butter at room temperature
  • ¾cupgranulated sugar
  • ¾cuplight brown sugar lightly packed
  • 2large eggs
  • 2teaspoonpure vanilla extract
  • 1 cupold-fashioned rolled oats
  • 1cupsemi-sweet chocolate chips
  • ¾cupunsweetened coconut
  • cup chopped pecans

Instructions

  1. Preheat the oven to 350° and have ready a sheet pan lined with either a sheet of parchment paper or a silicone baking mat.

  2. In a medium-sized mixing bowl, combine the flour, baking soda, sea salt and cinnamon (if using). Whisk to evenly combine. Set aside until ready to use.

  3. Add butter, granulated sugar, and brown sugar to the bowl of a stand mixer fitted with a paddle attachment. If you do not have a stand mixer, use a large mixing bowl and a handheld mixer. Cream the butter and sugar for no less than 2 minutes on medium-high speed.

  4. Add the eggs to the bowl one at a time, mixing well after each addition. Then add the vanilla extract and mix until combined.

  5. With the mixer on low, gradually add in the dry ingredients, followed by the oats, chocolate chips, coconut, and chopped pecans. Stop mixing as soon as everything comes together.

  6. Scoop heaping tablespoons of cookie dough onto the baking mat spacing the cookies at about 2" apart. Bake for 12 minutes, until the tops of the cookies are golden brown. Serve and enjoy.
