Ingredients

Sandwich Ingredients

  • 1 boneless ribeye approx. 16 oz
  • 1/2 cup beef stock (or broth)
  • 1 bunch fresh thyme
  • 4 baguettes, or rolls approx. 8 inches long
  • 1/2 cup horseradish sauce
  • ground black pepper
  • kosher salt
  • 4 slices provolone cheese

Au Jus Ingredients

  • 3/4 cup French onion soup
  • 1/2 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1/4 tsp sugar
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/3 cup cold water

Instructions

  • Season beef generously with salt and pepper.Set out of the fridge for about 30 minutes so it can get to room temperature, if possible

  • Preheat grill to 375ºF

  • After grill grate is hot, place steak on grill and sear for about 5 minutes per side, cooking until medium rare. If you have a probe thermometer, remove steak once the center reaches an internal temperature of 130ºF

  • Let steak rest for 10 minutes then slice as thin as possible, a very sharp knife helps

Au Jus

  • In a saucepan, combine french onion soup, beef broth, sugar,Worcestershire, salt, and water. Bring the mixture to a boil over medium heat

  • After Au Jus mixture has been brought to a boil, reduce heat to simmer. After 8 minutes, taste sauce and season with salt and pepper to taste

  • Spread horseradish sauce on the bottom side of each roll or hoagie. Dip steak slices in the warm Au Jus and then place slices on the bottom of the hoagie on top of the horseradish

  • Place provolone cheese slices on top of the steak slices. Season to taste with salt and pepper

  • Transfer remaining Au Jus to dipping bowls and serve alongside sandwiches. Enjoy!
